On choisit le Rome Cavalieri pour une raison simple : à Rome, peu d’adresses tiennent ensemble 345 chambres avec balcon privé et une table signée Heinz Beck. L’hôtel a ouvert en 1963, et il garde cette logique de grand établissement qui sait encore ménager de l’espace. Ici, le vrai luxe n’est pas la démonstration. C’est le recul. Vous êtes à Rome, mais légèrement au-dessus de son tempo, avec La Pergola en point culminant. Le Guide Michelin parle d’une vue spectaculaire depuis le toit ; pour une fois, la formule n’est pas de trop. Ce Palace classé 5 étoiles par Atout France joue sur deux registres très romains. D’un côté, la ville du rite, du dîner qui compte, du Five O’Clock tea au Tiepolo Lounge. De l’autre, une mécanique hôtelière solide, avec 370 clés, room service 24 h/24, voiturier et check-in fixé à 3:00 PM. C’est cette combinaison qui fait la différence. Pas l’effet d’annonce, mais la capacité à faire cohabiter une grande maison internationale, née sous l’orbite Hilton Worldwide, avec un sommet gastronomique qui regarde Rome comme un décor de cinéma italien.
