On choisit l’Island Shangri-La pour une raison simple : à Hong Kong, peu d’hôtels cumulent l’échelle d’une tour de 213 mètres et deux tables Michelin sous le même toit. Ici, le bâtiment compte 544 clés, mais l’adresse ne se résume pas à sa taille. Ouvert en 1991, au sommet du complexe Pacific Place, il joue une partition très hongkongaise : verticale, fluide, précise. Wong & Ouyang ont signé une silhouette que Wikipedia FR classe parmi les gratte-ciel chinois ; sur place, cela se traduit surtout par des vues qui changent selon l’orientation, entre Victoria Peak, la ville et Victoria Harbour. Côté table, le vrai repère reste Petrus, où Uwe Opocensky a imposé un ton personnel, jusqu’à ce dessert « Snickers » que le Guide Michelin relève sans détour. L’autre force de la maison, plus pratique, tient à sa mécanique : room service 24h/24, voiturier, conciergerie, check-in à partir de 15:00. En clair, c’est une adresse pour voyageurs qui veulent un grand hôtel capable d’absorber le rythme de Hong Kong sans perdre en tenue. Ce n’est pas un refuge caché. C’est une machine bien réglée, avec du métier derrière chaque porte.
