Ici, l’intérêt n’est pas de cocher un Palace parisien de plus. Il est de dormir au 24 Rue Cadet, puis de descendre dîner chez Golden Poppy sans quitter l’hôtel. Ce détail change le séjour. Le registre Atout France confirme bien 5 étoiles et la distinction Palace. Le reste du brief reste parcellaire, donc je m’en tiens aux faits solides. Le plus net porte la signature de Dominique Crenn. Le Guide Michelin la présente comme la première cheffe française à apporter à Paris une cuisine californienne contemporaine, nourrie d’influences culturelles multiples. C’est une proposition rare dans ce quartier du 9e arrondissement. Ensuite, tout se joue à pied. Supernature est à 224 mètres pour un déjeuner simple. Bouillon Chartier Grands Boulevards est à 388 mètres si vous voulez une salle classée, plus animée, plus parisienne. À quelques minutes encore, la Grande Synagogue de Paris rappelle une autre couche du quartier, inaugurée en 1874 et haute de 36 mètres. La Fantaisie se lit donc moins comme un décor que comme un point d’appui précis. On y dort, on y dîne, puis on part explorer un morceau de Paris dense, serré, très praticable.
