On vient ici pour une chose simple : dormir dans un Palace d'Atout France au milieu des coteaux, puis dîner à une table qui compte vraiment. À Vinay, l'adresse tient sa singularité dans ce contraste précis. Le registre officiel confirme 5 étoiles. Le Guide Michelin confirme 1 étoile pour Alcôve. Entre les deux, vous avez une maison bâtie sur l'emplacement d'une ancienne briqueterie, ce qui lui donne d'emblée une assise plus terrienne que cérémonielle. La cheffe Nawal Rezagui y impose le fait le plus net du dossier : une cuisine moderne, exacte, avec un flan iodé de thon fumé et caviar d'Aquitaine, puis un dessert au bergamote, pamplemousse, kombucha et huile d'aneth. C'est ce détail qui m'intéresse ici, plus que les effets de décor encore mal documentés.
