Ici, on vient pour une chose précise : dormir dans un Palace Atout France à Théoule-sur-Mer sans perdre le contact immédiat avec la mer. L’adresse compte, et celle-ci ne triche pas. Au 47 avenue de Miramar, vous êtes posé entre la route côtière et l’eau, avec Le Moya Beach à 20 mètres. Peu d’hôtels tiennent cette promesse avec une telle netteté. L’autre repère, c’est la table. L’Or Bleu garde 1 étoile Michelin, et Alain Montigny signe une cuisine qui donne une vraie raison de rester dîner sur place. Je pense notamment à la langoustine rôtie, relevée de tartare de betterave et d’un condiment framboise. Ce n’est pas un décor de carte postale ajouté après coup. Théoule-sur-Mer appartient bien à cette géographie de roches rouges qui annonce l’Estérel, si proche de la Croisette cannoise sans en prendre le rythme. C’est là que l’hôtel se distingue. Il sert une Riviera plus calme, plus directe, presque latérale. Si vous cherchez une adresse où la mer structure la journée, du premier café au retour du dîner, vous êtes au bon endroit.
