On vient ici d’abord pour une table, et c’est assez rare pour donner le ton du séjour. Hotel Bebek tient sa ligne sur un fait simple : 5 étoiles, et un restaurant qui compte déjà 1 étoile Michelin. Le nom à retenir, c’est Yoshizumi Nagaya. Son Sankai regarde le Bosphore et travaille une cuisine japonaise tenue, sans effet de manche. Le détail qui reste en tête n’est pas décoratif. Ce sont ces joues de veau cuites 48 heures à basse température, presque confites, relevées par Michelin. Dans un dossier encore partiellement incomplet sur l’architecture, le spa ou les services, la restauration donne ici la lecture la plus fiable de la maison. C’est d’ailleurs très stambouliote dans l’esprit : on juge une adresse à sa salle, à sa vue, à sa constance. Le Bosphore fait le reste, comme dans tant de récits d’Istanbul, de Pierre Loti à Orhan Pamuk. Si vous regardez Hotel Bebek avec exigence, prenez-le ainsi : non comme un palace à raconter en généralités, mais comme une adresse où le séjour s’organise autour de Sankai, du lounge aux accents marins, et de Dragon pour le registre chinois.
